Patty Cakes
4 oz butter
4 oz white sugar
2 eggs
1 tsp vanilla essence
1 tbsp hot water
8 oz self raising flour
approx 150ml milk
Cream the butter and sugar. Add the eggs, one at a time, beating after each addition until fluffy. Add the vanilla essence and hot water. Sift in the flour alternatively with the milk. Spoon out into patty pans and bake in moderate oven (around 160 degrees) for approx 15 minutes.
Icing for Patty Cakes
1 tsp butter
1 tbsp hot water
Lemon juice
Icing sugar
Mix butter with hot water. Add icing sugar to achieve the consistency you want. If it gets too firm, add small dash of water to thin it down. Add lemon juice to taste. Use immediately.
